French Madeleines

3 eggs (115g)
115g caster sugar
155g plain flour
100g unsalted butter -melted
zest of 1 lemon

Pre-heat oven to 200 C
Whisk eggs and sugar until mixture is thick and creamy.
Gently fold in flour, melted butter, lemon zest
Spoon into mould (dollop and dont spread)
Lower oven temperature to 180C
Bake for 12-15 minutes until light gold in colour.
Remove and cool on wire rack.
